I sauteed the onions, potatoes and garlic in a large pan with olive oil. Sprayed and oil on a pie dish. Placed the cooked potato mixture in the pie dish and topped with the egg mixture which I added fresh chives and parsley. Baked in a 350 oven for minutes. I opted for this method because the amount of potatoes and eggs make it hard to flip this making it very easy and prettier. I rated this 5 stars for flavor but more so because of the Nutrition Facts.

This was very good. I made it for dinner the other night and the whole family loved it. My kids ate it with ketchup and I ate it with salsa. I did have a hard time flipping it and ended up cutting it in fours and flipping it that way, but it turned out very good. Thanks for posting!

A good, light recipe. We felt like it was missing some spices but other than that we enjoyed it eaten with salsa. I liked how quick & easy it was & that it was all staple items. I cut the recipe down for two of us & used 4 whole eggs. Thanks for sharing, Dreamer! Made for ZWT 5 - Ali Baba's Babes.

a yummy omelet. I did make the mistake of scaling it down but used a HUGE potato so my picture doesn't look very "omelety" or even fritattay. the taste was great though!
