Having desserts like this is great when trying to lose weight. My WW leader gave a similar recipe. Her suggestion for the cake falling was to let it cool upside down. Her version called for the addition of 1/3 cup cocoa for a Black Forest version.

So easy a toddler can do it - & she did! DD & I made the recipe according to instructions but I added a half teaspoon of almond extract into the cherry pie filling. We trusted the 12 servings suggested in the recipe but next time I'll make 24 cupcakes or use the angel food pan. My photos do not do the recipe justice, so will not post. But we'll be keeping these simple ingredients on hand because the whole family really went crazy for the flavor of this recipe & I know it's going to be a favorite treat. Thanks for sharing, Becky! What a pretty pink cake! I made this for Mother's Day as an alternative to a German Chocolate cake and it was a hit! I baked mine in a tube pan, and the only problem I had was it caved in. I'm not sure if it was due to the heavy pie filling or something else. I'll probably bake it in a 13x9 inch pan next time, same as the pineapple angel food cake. Thanks Becky, I'll be making this often. I've already bought the ingredients for another one. This is a great standby.

It doesn't get much easier than this! I baked mine in a 9-by-13 inch pan - about 25 minutes at 350F convection. It fell somewhat as it cooled but what the heck; when you're trying to diet and craving sugar, texture takes a back seat.
I do prefer the pineapple version but this was a nice change. Thanks for turning me on to this.

I used rmurraymom's suggestion and added 1/3 cup cocoa to the mix. The results were a light, delicious guilt-free dessert. It was a bit chewy, so make sure you don't over mix it even by hand. Excellent with light cool-whip or ice cream on top too.
