This little sandwich is so tasty. And easy! I loved the garlic in it and I liked that it didn't need cheese. I have several vegetarian family members so can't wait to prepare this for them. Made for ZWT4. (-:

OUTSTANDING! i have made portabello panini's b4 but this is absolutely the best, with the onion and porties marinating for a half hour in the garlic and oil...oh heaven. I did add some mozzarella to it, and made it in a panini press.

After reading previous reviews, I went ahead and sliced the mushrooms to let the seasoning get to the inside, and made this in a nonstick skillet, pressed with my heavy skillet lubed with some cooking spray. Worked like a charm! And the taste . . . Oh, heavenly. The bread I picked up was an artisanal sourdough loaf, and the sourness REALLY worked with the mushrooms and onions. Thank you so much for posting, made for ZWT4.

Hubby asked, "whatever you did to the mushroom - DO IT AGAIN!!" This had incredible flavor! I made it on a panini pan for ZWT4. I ended up pan frying everything, but it was still incredible without adding anything else.

This was a great inspiration for my creative Panini. I started out making it per the recipe and after going throught the fridge (and the garden) decided to add a few more items. I added fresh mozzarella, arugula, fresh basil leaves, roasted yellow peppers, and grilled eggplant. It turned into a whole new sandwich but this was the inspiration recipe! Thanks! I also used Brick Oven whole wheat bread from local Artisan instead of the Italian loaf.

Yum! I scaled the recipe down for one, ended up slicing the portobello so all sides could get nicely seared. I loved the nicely browned onions and garlic. Thanks Vicki! Made for the Italian Panini Challenge-ZWT4! :lol:

This is delicious! I loved the mushrooms and onions together and I thought it all had great flavor. It was easy to make and so tasty for lunch. Made for ZWT4 for the Tastebud Tickling Travellers for the Italy Perfect Paninis Challenge.

Made for ZWT4. Italian Panini Challenge. This little sandwich was very tasty. And easy! We loved the garlic in it, and DBF added aged provolone, and home cooked ham. I added shredded carrots and tomato slices. We have several vegetarian family members that will enjoy this next time we get together. Did take photos, but I think I need a courseā¦. They were not as good as the ones already there.

This was part of our mini panini party. I spread out dozens of ingredients and posted the recipes nearby. Everyone enjoyed this dish, but many thought a few herbs would be great additions — perhaps basil and oregano.
