This is a great recipe if you make a few changes. Don't add the brown sugar. I'm Armenian and I know stuffed peppers (just trust me on this) and a lot of people thought there was something missing in the flavor and I figured it must be an onion. What is ground beef without an onion? Add about 1/2 medium onion when you brown the meat. It makes one great pot of soup...Enjoy!

Overall, I really liked the recipe but it was a little too salty for me. When I make the soup again I will use beef broth in place of the bouillion cubes and in place of some of the water and I will not add any additional salt. I also added some finely chopped onion as I wanted the soup to taste just like stuffed peppers. (I also used ground sirloin to make the soup leaner and I used long grain brown rice instead of white rice to make it healthier).

This was delicious! I didn't feel like making stuffed peppers, but they sounded good and this fit the bill. I didn't add the sugar and I just threw uncooked rice in and it turned out great! Thanks for sharing!

Made recipe exactly as listed but it was still missing something. So I added some ketcup to it and then it tasted perfect. I will make it again but now add some ketcup.

omgosh we loved this soup. This is the first time I made this and will make this over and over
Even our 21 year old who asked what I was making and he goes eww well let me tell you he had two huge bowls and said mom, this is so good
and wanted even more lol This soup is awesome esp. if you love stuffed green peppers. I added extra rice and green peppers and was perfect.

I loved this soup so much I may never make stuffed peppers again! This was so fast and easy to put together and so yummy! I halved the recipe but used less sugar and salt, a half pound ground beef, some chopped onion, 2 cloves of garlic, and about 3/4 cup uncooked instant brown rice instead of white rice for a thicker soup. I served with "Momma's Bestest Biscuits" for a fantastic dinner! Thank you for sharing this wonderful recipe Debe!!

Wonderful soup and we will make again. I used one 15oz can of diced tomatoes and one 15oz can of diced tomatoes with green chiles in one batch. The green chiles gave a nice spicyness to it. My wife does not like spicyness so I made a half batch using diced tomatoes with roasted garlic. Both batches turned out great. I did add onions to both batches. It is a keeper

Delicious! Indeed tasted like stuffed peppers-even better considering my DS's never eat the 'pepper', this way they did. I used a combo of red, green, and yellow peppers since they were already in the crisper. I also decrease the water since we like ours thick. Sprinkled the grated parmesan-Perfect.. Thanks Debe!

This was greatI followed the recipe as written and froze half.The second time we ate it I stretched it to feed more by adding a can of beans with chile and topped it with ground up tortilla chips,sour cream and salsa.Tasted brand new,but still delicious.

Yum. My husband cooked this tonight and it was great. I walked in the door and the aroma made me think he was making stuffed peppers — it's that close in taste, too. And it has to be easy to make or he wouldn't even have tried it. Highly recommended.
