I made this for dinner last night and it was a big hit! I thought it resembled the whole rotisserie roasted chicken that you can buy, and was absolutely delicious. The skin was crispy and tasty and the chicken meat was moist and perfectly cooked. I was only able to fit 1 onion in the chicken, used 2 T lemon juice, and sprinkled some toasted onion powder along with the other seasonings. It was perfect! Thanks so much for posting, Kitten. This one is definitely going into my favorites cookbook and will be made often!

    I was very skeptical of this technique. I seasoned the chicken and then sprayed it with vegetable oil. I insert a few cloves in my onions before packing the bird. I used a 7-8 lb chicken and it took about an additional hour to reach the correct temperature. This produced delicious results.

    This recipe was easy, quick and produced a tasty chicken. I lined a large roasting pan with tinfoil and placed quartered red potatoes, chopped onions and baby carrots tossed in a little olive oil and spices on the bottom of the pan, placed the rack on top of the vegies, and then two side by side chickens on the rack. The vegies cooked in the chicken juices and came out cooked to perfection. Probably not the healthiest vegies, but they were tasty.

    This recipe came out really flavorful and juicy, just as promised. I made 2 small chickens (3# each) so more to enjoy. It did cook a little faster than the one hour at 400 degrees. One suggestion: next time I'll marinate earlier and get some of the rub under the skin--helps flavor the chicken more.

    Absolutely the BEST method for roasting chicken. Mouthwatering! I tuck little pieces of butter and garlic under the skin on the breast to make it even more juicy and flavorful, but otherwise follow this recipe to the letter with wonderful results. All of your recipes are amazing, I've tried several and loved every one, thank you so much for sharing them.

    I tried this last night after a hard day at work and it was fabulous! Quick and easy...then only thing I did differently was put some aluminum foil over the chicken the last 20 minutes because I was afraid the chicken would brown too much. This could be because I used about a 4.5 pound chicken. LOVED IT! Thanks for a great time saver that is good for you!

    The best roast chicken recipe I've ever made. The skin was fantastic, crispy and flavorful, the breast juicy. My chicken was a free-range 5 lb from Trader Joes. I followed the recipe exactly, adding 10 min due to the size. I cooked it on a rack in my convection oven. For just the two of us, I got 5 meals out of this chicken !!! 1st night - served with mashed potatoes and buttered asparagus. 2nd night - we had a guest, I saved the drippings, which were not burn't, possibly because I sprayed my stainless steel pan with olive oil Pam, or maybe because of the convection oven. I made a wonderful mushroom gravy, after refrigerating it the night before and removing the grease the next day. Served it with left over potatoes, broccoli and a caesar salad. 3rd night - Chicken tostatas, easy and tasty. 4th night - Chicken noodle soup. Didn't even need to add any seasonings, and it was great 5th night - for the future, had plenty of soup left over, in the freezer, for another meal. Not bad for a $8.00 chicken Thank you, Kittencal

    This chicken was soooo moist and was so delish!!!! I'm giving you 10 stars for this one, KIT. The only thing i changed was i stuffed the inside with some chopped garlic, sliced onions and some scallions. It was a big hit. Thanks so much.

    This is an absolutely fantastic easy way to cook a whole chicken with amazing results! It really did have so much more flavour than a bought BBQ chicken and was so moist. I cooked the chicken on a rack and added some potatoes, carrot and pumpkin in the dish. Delicious. I do not have a thermometer but this has prompted me to do so. The chicken was still a little pink deep down. I am not sure but think my oven threw a hissy fit with about 30 mins to go. The cat ate the remainder of the chicken and he says " 5 stars to Kittencal".

    This was excellent! I too added some root veggies (tossed in a small amount of olive oil, salt and pepper) to the bottom of the pan and they were delicious.
