I made two large 9x13 pans of this for the 15 people I had over for Mother's Day brunch. Everybody loved it and it was so easy because I did all of the work the night before. I varied the recipe a little by using bacon instead of ham, I omitted the pepper but added chives and tomatoes. Definitely a remake!

Made this for breakfast this morning. It is so good and easy. I'm not an omelet lover but I am now. Halved the recipe and placed in a 9inch pie pan. Thanks for such a delicious recipe MizzNezz.

Excellent, tasty and easy recipe. I wanted to use up some leftover ham and this fit the bill perfectly. I had overnight guests and made this dish - it was very quickly gobbled up and everyone commented one how tasty it was. Thanks!

Easy to put together and very tasty. I halfed the recipe and used Italian seasonings instead of the parsley. I like the idea that it can be put together the night before and baked in the morning. I'll make this often.

So easy to prepare and soooo tasty. I cut the recipe in half and had lunch for two. I used a round baking pan, cut omelet into pie shaped slices and served with hash brown potato patties. The only thing I added to your recipe was a little salt and black pepper when I stirred in the ingredients. A wonderful lunch. For my own taste I heated a small amount of mild salsa which I put over my slice and a spoonful of sour cream. Great either way. Thanks NurseDi.

This is delicious! I halved the recipe and made this last night for my son. We didn't have half and half, so I just used milk. It was still yummy. It was very quick and easy. Thanks MizzNezz!

I really like this because omelets made the traditional way never work out for me. I also like the fact that it can be made right away in the morning. Nice for a ladies' brunch too. I think I'll put some chopped spinach in it next time. Loved it! Thanks Miss Nezz.

I used cheddar cheese cubes, cooked chopped bacon, green peppers, and green onions. I only beat the eggs by hand until they were well mixed. I will try using an electric mixer because now I'm realizing maybe that's what MIzzNezz meant by "beat". I used a 9 x 9 baking dish and it was perfect. I had to cook it for 10 minutes longer than expected though, so if you're making this as a potluck dish right before you go to the event, you'll want to add extra time to your estimate just in case. It got good reviews, but I thought the texture was tough and almost grainy. Maybe that's because I didn't use an electric mixer. I'm so glad I used the cheese cubes because you could really taste the cheese and appreciate it, rather than shreds just being lost in the egg.

This is excellent! I made it for dinner last night and we all loved it. I left out the ham since I served bacon on the side but made as posted otherwise. I ended up baking a little longer than 25 minutes and it was light fluffy and delicious. I served with Pan-Browned Potatoes With Red Pepper and Whole Garlic, bacon and pancakes ~ yum!! Thanks for posting!
