These should have a warning on them "sugar overload". They are rich but very good. Also, Splenda can be used in place of the sugar. In place of the apple pie filling, I used my recipe for Cracker Barrel Fried Apples Cracker Barrel Fried Apples, reducing the sauce and eliminating the cinnamon. This made a sweet ending to our Mexican themed Christmas brunch.

    This recipe was a fun one to make. My kids helped out it was so easy. Reminiscent of an apple dumpling/cobbler type dessert. It had a yummy gooey apple-cinnamon filling. The whole family enjoyed it and agreed--5-stars for flavor, ease, and fun. Thanks.

    Love this recipe! I also have used cherry filling and like that even better. The apples seemed a bit too chunky for me but very tasty nonetheless! Will make these often! Goes great with a dollop of cool whip or ice cream.

    These are excellent, and so easy to make! I made these for a Cinco de Mayo potluck at work, using a 13x9 dish. Placed lengthwise, I was able to get ten enchiladas (two rows of five) in the dish. Even though there were more enchiladas, I used the same proportion for the sauce ingredients & still had plenty. Before ladling the sauce over the enchiladas, I sprinkled them liberally with more cinnamon. When the 20 minutes of baking was done, I pulled out the dish & spooned the sauce over the enchiladas, and then put them under the broiler to crisp up a bit. The house smelled wonderful while these were baking - like an apple pie! Served with Cool Whip ... these were a big hit at the potluck. Thanks for posting - I'm sure I'll use this recipe again, and will try it with different fillings & spices. -M =)

    I whipped this up in no time. So very easy. My family did back-flips over this. Nice cinnamon-apple pie flavor. The brown sugar-butter sauce definitely adds a magnificent yum factor. Thanks Nurse Di.

    I have served this dessert many times after a Mexican-themed dinner. I usually added a scoop of vanilla ice cream when serving it up and drizzle with some of the sauce.

    I was in a panic. We were having unexpected guests for dinner and I felt like I had to have something for dessert. Zaar and Nurse Di to the rescue. I already had all the ingredients and the dessert enchiladas turned out well. The warm cinnamon apple filling was delish. I plopped some Cool Whip on top and sprinkled with ground cinnamon. Beautiful and soooo easy. Thanks.

    This is a favorite in my house! I prefer a lower sugar content and usually make adjustments to this recipe. I use no sugar added apple fruit filling, substitute splenda brown sugar and regular splenda for the brown sugar and sugar, wheat tortillas instead of flour and I have cut the margarine back to 1/4 cup. Even with these changes, this is a tasty dish that is very rich.
