Truly original and truly delicious. This is one of the most colorful salads I have ever eaten. The glistening black beans looked great against the creamy white of the couscous, offset by the brilliant red of the pepper and the dark green of the cilantro. The yellow of the corn really stand out next to the beans. I only used one can of beans and this was a huge salad. It went quickly, it really complements the taste of grilled meat! Thanks Yooper, this is a winner!

    This salad is great- wonderful mix of colour and flavour. I used only one can of beans and it was plenty. I also added 1 heaping tablespoon of Tex-Mex seasoning to give it lots of zing. Will definately make it again.

    A delicious, fresh salad that I couldn't get enough of! I made a couple of slight modifications to the recipe: I used a box of Near East brand couscous (Garlic & Olive Oil flavor) and cooked according to package directions, so I omitted the chicken broth. Also, I used 1 can of black beans and 1 can of corn instead of what is listed. This makes a LOT, so be prepared for leftovers! Also, the dressing is very light (which was fine with me), but anyone expecting or wanting a strong-tasting dressing might want to double the recipe for it.

    This was a big hit at Christmas and afterward, in fact my sis made sure I didn't take the rest home with me. The only modifucation the I made was I doubled the dressing. I don't like my salad to be the slightest bit dry. It also holds up very well over a few days. I had some today (2 days after I made it) and it was still great, unlike some pasta salads that lose thier flavor over time. Great job yooper.

    Excellent! I have tried so many of your recipes but this one is over the top. I just loved it. It's beautiful to look at and so very very tasty. I'm going to marinade some chicken breasts in the dressing and grill them then add to the salad for a main dish. We also loved it so much that this is now on the menu for our 4th of July cookout. Thanks so much for posting this wonderful recipe and to whoever posted the recipe so that it caught my eye.

    I can't believe I forgot to rate this! I have now made it three time. I make exactly as the recipe calls for and wouldn't change a thing. I took it to a potluck the first time and people raved about it. It really is fantastic. It stores well for days in the fridge...so I take it in my lunches and people are always intrigued and ask what is in it. I love that this is so healthy. This is permanently in my make often file! Thanks again!

    nade this as a request from my daughter. she loved it. I substituted chopped fresh italian parsley for the cilantro (cause we can't stand cilantro) and used canned green giant niblet corn. It was great.

    This was a fabulous salad. I used only one can of beans, and increased the lime juice and vinegar a bit, just because I tend to like foods on the tangy side. I really liked the fact that the dressing was made with olive oil and vinegar rather than mayonnaise so it can stay at room temperature for a longer time. I can also see that the list of ingredients are very open to change for variety. This is one of my very favorite recipes, Yooper. Thanks so much for posting!

    Wow, this was delicious! I put in less than a tablespoon of oil and don't think it needs any more than that; I also mixed in pre-cooked shrimp. Yum!
