This was a great recipe. It does not make a huge amount, so if you want to serve it for company or a cookout, you need to double it. However, it is the perfect amount for a family. It is a nice chage of pace from a regular potato salad. I did use red bliss potatoes and boiled them, rather than using baked Idahos. I find that Red Bliss holds their shape a lot better than Idaho or Russets and do not fall apart or become mealy. Aside from that, I followed the directions exactly. Thanks for a good recipe.

This recipe is quite similar to the baked potato salad a little store in town sells. I accidentally added too much paprika to mine (somehow I read it as 1 tbsp paprika and since I was in a hurry and busy making other items concurrently it didn't strike me until the paprika had already sunk into the potatoes what I had done), but even so it was very tasty and I could tell that preparing the recipe as stated would produce excellent results. I was going to post a photo as well, but since the paprika made the potato salad a little bit too reddish-orange, I will wait till next time to upload one. I will also give a star rating then as well, but you can bet it will be 5 stars as tasty as this salad was already. Thanks for posting! Updated 07-07-04: I prepared this again without so much paprika in it and it was as wonderful as I hoped for. Tastes like a loaded baked potato. Excellent! Thanks again!

Thanks for the wonderful recipe! I prepared it as directed except I probably added more than a dash of the seasonings. I was serving the salad with NurseDi's brisket so I warmed up the potato salad in the oven just until the cheese melted. I got raves! The family was intially reluctant to try, commenting "potato salad that's warm? ick" But one by one they came around!

I made this for a Super Bowl party and it was a hit! A friend said it was the best potato salad she'd ever hand, even better than her mom's. I didn't bake the potatos - I boiled them, then dried them out in the oven a bit at 350 degrees for about 5-6 minutes. Otherwise followed the recipe. Hubby really liked it too and said it should become our "regular" potato salad. Thanks Lois for a great recipe!

The title doesn't lie- this is so yummy! I adore baked potato salad and this is definitely a tasty one! I used an aged cheddar, so I used less than called for because its got a more pungent cheese flavor. Really tasty! I did add about 3/4 tsp cider vinegar, though, because I wanted a bit more tang and that was perfect. Thanks for posting! BF and I loved this.

Yowza Wowza!! Wonderful salad that complimented Nurse Di's Best Beef Brisket. As Cookiemaker suggested, I put the salad in the oven to warm through and it literally tasted like a baked potato! The family loved it - this recipe now gets moved to my tried and true keeper cookbook. Thanks Lois!!

Really, really good and a nice change from the same old potato salad. I used Miracle Whip, because that's all we had but it was still terrific. I used small new potatoes from the farmer's market so kept the skins on and they added a nice texture. I'll be making this one a lot.

This potato salad is fabulous!If I could give it more than 5 stars I would. I made it exactly as directed in the recipe and I can promise you this is now one of my favorite potatoe salads and it won't be the last time I make it. This will be made often! Thanks for posting!

I stuck to the recipe except for the bacon, i used diced ham instead, it was delicious. All my guests wanted the recipe. Next time i'm going to leave the skins on the potatoes and serve it warm like the other reviewer have suggested...just to see if you can improve on perfection!

Loved it! Thanx for posting. I used a little bit of miracle whip and a little bit of Hellmans since we really like Miracle Whip.Also used some fresh cooked bacon and some real bacon bits. It was still fabulous. Nice change. Thanx for sharing
