This is one of my favorite recipes from one of my favorite cookbooks. I love all three of their cookbooks! This recipe is delish with a salad. Thanks for posting it!

I am loving this recipe! We had this for dinner tonight and DH asked if I could make this once a week, that's a sure sign that he loves it! I used a medium salsa and a few extra sprinkles of cumin, b/c we love cumin and topped with ff sour cream. Perfect amount of spice for us, next time I may add some shredded chicken to the bean mix. Yummy! I have made this a few times. Red bell peppers are a good substitute for green. Definitely use hot salsa for some spice, additional cayenne too, if you want more of a kick (or more salsa to garnish). Avocado makes a good topping. I used only about 1/3 of the cheese, this would depend on your taste. You could also add very lean ground turkey to this, if you are not vegetarian. This recipe serves 6, rather than 8. Enjoy!

What a great idea!
I scaled it down quite a bit, as it was only for me. I added paprika aswell as cumin with the salsa & i was very happy with the results.

UPDATE: enjoyed this recipe a few times now
I had my heart set on making it for dinner the other night, but realized, too late, that we didn't have any salsa.
No matter... Salsa to the rescue!!

This is one of my favorite recipes! It freezes extremely well - it is nice to defrost and microwave a single portion for a filling vegetarian lunch.

Simple to prepare and really flavourful. And the portion sizes are so generous, you don't really feel like you're eating low fat at all!

I've made this before and love it! I agree, there's so much flavour going on, you don't even notice that it's low cal or meatless.

Very good! Easy to make and filling. I used medium salsa, but if you like it hot you should probably use hot salsa and maybe add some jalapenos. Thanks for the recipe!
