14 Reviews of Irish Boiled Eggs & Dippies for One

These were very good! A little heavy on the butter for my tastes, but an overall tasty recipe. It is often some feat to time soft-boiled eggs properly, and this recipe had the timing nailed down to a science. My eggs turned out perfectly soft to the minute. This recipe also brought back childhood memories for me - my mother prepared these often for me and my sisters.

Oh Bergy, thanks for this delightful reminder of my childhood! My (Irish) paternal grandmother used to make this many times for breakfast, and it was such a treat to have this yummy meal again. Okay, I confess, I did not add as much butter as suggested into my eggs ... although I did add some. What a terrific St. Paddy's Day "brunch" — I cooked up some bacon, too; it was an easy meal to prepare. I must continue to make soft-boiled eggs; I had forgotten how good they are. Thanks again for posting!

What a great memory! I always asked for "A Humpty Dumpty egg with Soldiers" My mom would soft-boil the egg for me and I would dip the toast soldiers into the egg. Sometimes she drew a smiley face on the egg aswell!

Fun. I don't have egg cups, so eventually I just put the egg over crumbled buttered toast. I hadn't had soft-boiled eggs in years. My mother used to make them for me when I was ill, which made me not want them the rest of the time, but lately I like them again.

Bergy; This is exactly the way I cook and eat my soft boiled eggs. Butter, salt and pepper and slices of toast for dipping, WOW!! My eggs are 4 minute eggs, PRECISELY (as Jack Webster used to say), do you remember him on CJOR & CKNW? My Dad had 2 minute eggs, put them in an egg cup, clipped the top off, put a pat of butter into the egg, a bit of salt and pepper, and then DRANK THE EGG. Thank you for reminding so many as to how to cook the perfect soft boiled eggs. I keep changing from soft boiled, to poached to fried (with the eggs basted, then scrambled in many different ways. I love poached eggs with toast to dip in the yolks. This was an even simpler way to achieve that result. I omitted the butter and served it with toasted whole wheat raisin bread. Simple breakfast, snack, lunch or dinner when I am on my own.

I haven't had soft boiled since I was wrestleing in high school over 30 years ago. One of the diet recipes were soft boiled eggs over puffed rice. Of course, coach's recipe didn't include butter. I made these eggs and mixed them with puffed rice. Thanks for the wonderful recipe and memories.
