Yum! I used red onion instead of green, added bell peppers and used sausage instead of ham (didn't have any.) Also added a splash of worchestershire sauce and some dry mustard, salt/pepper. This is a great base recipe...you can add anything you want! Thanks for sharing!

Great recipe. I used crusty whole wehat bread and added vegetarian "sausage" patties and some chopped jalapeno peppers. After baking I sliced an avocado for the top. Very good. Thanks very much for sharing this.

Oh, Lainey, you've got SO many wonderful recipes! This is another keeper for sure. I had everything in the bowl and ready to whisk when my son asked if there'd be enough for him, so I ended up doubling the recipe. Also added salt, pepper and a sprinkle of dry mustard like other reviewers. Baked it in a preheated iron skillet and it was done in 22 minutes. Thanks for posting this one!

Easy and tasty, I added salt & pepper, increased the cheeese to 1/2 cup, and topped it with sliced tomatoes and another sprinkling of shredded cheddar. Plan to sub out some of the cheddar for american cheese next time. Lots you can do to personalize this one! Thanks Lainey!

Since I was the only one eating this is was the perfect amount, I ate the whole thing myself and enjoyed every bite! I did some amount adjustments and used Swiss cheese in place of the cheddar and also sprinkled some on top, thanks for sharing Lainey!

I rate this 5-stars because it is one of those recipes you should keep in your tried-and-true basics folder. From this basic recipe, you can concoct endless variations in order to keep breakfast interesting, healthy, and hot! Note - I did need 25-26 minutes in order for the middle of my small casserole to set and not be wobbly.

Yum! I baked this in my heart shaped casserole dish. Hubby would have eaten the whole thing if he could. I used a chopped up Morning Star vegetarian sausage patty in place of the ham. It was delish & easy.

This was quick and easy to make. It tastes like a savoury french toast...I love the way it puffs up...my dh & I enjoyed this tasty dish very much. I used a combination of white cheddar cheese with Jalapeno's and good quality medium cheddar cheese. I can see many variations working well with this recipe, thanks so much for sharing Lainey.

I really liked this but, I don't think this is really enough for two people unless you have some other things on the side with it. I even added an extra egg. I used two slices of american cheese and just chopped it small instead of the cheddar cheese and used wheat bread instead of white.(Just a personal preference) Having said that, the flavor of this was great and we really enjoyed it but I think next time I'd just double everything. I used a rd pyrex dish to make this basic breakfast casserole & prob cooked it longer than I should have in my convection oven. It gets big pts from me for being easier to fix than most of the fix the nite b4 genre since it is assembled, popped right into the oven & cooks fast. A 2nd + is serving just 2 w/o a lot of leftovers. l used a light-colored wheat bread (no white on hand). We liked it, but I felt it stopped short of being all it could be & needed something, salt & Tobasco maybe or even some diced tomato. I suppose that is what pers pref are all about. It was a good & welcome weekend breakfast w/some fruit & coffee. Thx for sharing this w/us.
