Soup is a true comfort food and for this reason it is nice making it in the crock pot for its ease and blending of flavors. Cooking on Low on all day provides a chance for the flavors to blend together. This soup is FANTASTIC! I cooked it in my Rival 6 quart Smart Pot and it was filled to the rim. The only change I made was to add the pearl barley at the end of the cooking time because it does swell up and absorb all the broth. I added it the last hour of cooking. Serve this with homemade bread and a side salad and you have a complete meal.

This recipe is perfect on a cold snowy day! I used ground round, 4 cups of water, 1 can of beef broth, and 2 beef bouillon cubes. DH picked up quick cooking barley instead of pearl barley so I added it towards the end. Also, I had another recipe in the crockpot so I did make this in my dutch oven on the stove. Cooked on medium low for a couple hours and it was amazing! Great flavors and loved the barley, even better warmed up for lunch this afternoon. Thank you megsmom!

Nothing complicated here just pure comfort food at it's best. The balance of flavors worked so well as did the proportions of meat, vegetables and grains. I halved the recipe, including 2 full cans of tomatoes. At the end of six hours on low, I ended up adding another cup of water as well as the soup was quite thick and the barley was still cooking. Perhaps because it was a half batch, the soup was done at 8 hours. The barley was tender, soft without being mushy. Because the grains had released some starch, the stew had a nice thick meaty sauce. Just plain old yummy. Thanks!

This is comfort food at its finest, I did exactly as the recipe called for, except I used 3 cups of beef broth and the rest water. The barley gives it a nice flavor along with good vitamins.

I made this last night and it is a great comfort stew. I used my frozen tomatoes so had to add garlic, basil and oregano. The kitchen smelled heavenly all afternoon! Served this with bread and it was a very tasty filling meal. Thanks.

This was great and so easy to throw together. I used 2 cans of diced tomatoes and added 1 tsp basil, 1 tsp oregano, 1/2 tsp garlic powder. My crock cooks hot, so it was done in about 7 hours on low. I used a leek for the onion. We had Curry and Mayonnaise Rusks along with it. Makes a lot! I love that I can sneak in the barley!

I had leftover beef roast so I used that instead of ground meat. Also, had no onion so I used Beefy Onion Soup Mix and beef broth instead of water.(Did not add beef boullion) Made a loaf of crusty bread in bread machine(Basic White Bread (For Bread Machine)) and a salad for a delicious dinner. Great way to use leftover roast and was very easy and quick to throw together. Thanks for posting this recipe!

They were calling for bad weather today so I put this in the crockpot last night so we would have it for lunch today as I figured school would be cancelled. It smelled so good when I got up. I followed the recipe as written other then I followed another reviewers advice and added the barley in the last hour. We all loved this. It was good and easy to put together. This was my first time using barley. Will be making again.

What a wonderful soup! I made it in my 6 quart crockpot. I added a little extra garlic because we love it. And I omitted the salt because there was plenty of it in the beef bouillon. I served it with warm whole wheat dinner rolls. Thank you for posting this recipe, it's a keeper!

ok I just put this in my crock pot and it almost don't fit,and I have not put in the potatoes or barley as I am using canned potatoes and quick barley. I will update later. Ok I have added some corn and it is smelling great. I just hope I can get everything into the crockpot. it is full(3 to 3 1/2 qt)
