I love citrus, I love herbs - not so keen on turkey breast, but this turned out well. I did brine the breast in a simple brine for about 5 hrs. (5 lb. breast). I did not add any additional salt, and used only one lemon and one orange, as my breast was smaller, and forgot to put in the onion. Next time I will not use all the lemon, as we found the juices just a little too lemony, needed a bit more of orange to balance. I also used olive oil instead of vegetable spray. I will make this again, but will want to tweak the proportions a bit.

I loved this recipe! I made it without the wine, just roasted it and added 4 TBSP of chopped parsley to the rosemary and sage. Hubby said it was the best turkey ever!!
