This was AWESOME! I made this for lunch this afternoon. We had a guest come over who said it was the best rice dish he's had in ages! I felt very happy because he wanted to title it "Charishma's Apple Pea Rice". But, I told him, the credit goes to Casie completely
Thank you, Casie, we all loved the rice. I did add a little soy sauce to my serving, but the others preferred it without the same. It tastes good with or without the soy sauce. I used 1 cup of brown rice and it made 4-6 servings. The apples in this gave this dish the main punch, I'd say, they added all the flavour in the world to this. I loved this rice, I'll be making it very often or for a special party I'm planning soon

Thank you Casie! I am constantly looking for lower fat recipes for healthier eating...this one was absolutely scrumptious! Very unique flavor and makes a delicious light lunch or supper.

Perfect for a light dinner. I didn't have any canola oil so used olive instead, but I think Peanut Oil may be a nice alternative also.

Made this tonight to rave reviews — It was a fresh combination of crunchy sweet & salty with the apples & peanuts. Only change I made was to slice a hard boiled egg over the rice before putting on the veg... yum! Will definitely do again.

Tasty and healthy. The apples added a lot of flavor so it wasn't too dry. I made this for my sister and we munched on the left overs all night.

very very good. it was a very nice blend of flavors, the sweet apple, salty peanuts, and whatever soy sauce is. they all complemented each other well. I stir fried it in water however, which works just as well and a lot less calories. I also used brocoli instead of snow peas and added a little freshly grated ginger! my mouth is happy right now.

Excellent. I doubled the recipe for company (of 4 adults) and had a good portion of left overs. Oh well. I sent them home with our vegan guest who seemed excited about that. We had this stir fry with dried basil ( I didn't have fresh)and pretty much "as is" with brown rice and some of us had soy sause and some not. Very good both ways. I'm craving it now. Delicious and filling. Good complex flavor. Easy. Crowd pleaser. Yum.

I really enjoyed this easy to make dish. I did not have snow peas so I just added more carrots, and as I was out of basil, I used cilantro. Thanks for the recipe.

This is so yummy!! I made mine with water chestnuts and I added the rice to the pot at the end and tossed it for a "fried rice" dish. Yummy yummy!! Thank you Casie.
