These were very easy to make and looked lovely on our table at the end of our St. Patrick's Day feast. My kiwis were smallish, so I added a few more - the tartness of the kiwis is a nice complement to the sweetness of the pudding. I omitted the green food coloring, leaving the Cool Whip white. The alternating layers of color - green pudding and white Cool Whip looked very nice - especially with the sprinkling of green sugar atop the final dollop of Cool Whip. I think I might try using real whipped cream next time, but my family really enjoyed it with the Cool Whip. These were very good - and your kids will love them.

Lennie, we really enjoyed this. I used real whipping cream which I left white and topped that with the dyed green raw sugar for a pretty contrast. Also, I layered chopped up pieces of homemade sugar cookies with the other ingredients, the first layer on the bottom of the glass being the cookie pieces, and so forth. The guests thought this was the highlight of the meal. It's been years since I made instant pudding, especially pistachio pudding but we got a kick out the whimsical and colorful presentation. For fun, I decorated each serving on top with a thin slice of kiwi and a mini shamrock-shaped sugar cookie with green sugar sprinkles. Thanks for the suggestion. CG

This was great. I used a layer of pound cake to give it some more texture. This was a nice refreshing treat after dinner and it is very kidfriendly. Thanks.

A very easy dessert. It looked very pretty layered in the glass. The combination of the kiwi and pistachio makes for a unique flavor. Next time I think I will chopped the kiwi instead of slicing it. Thanks Lennie. Bullwinkle.

I didn't have any green food coloring so I tried adding yellow and green (3 drops each) but it didn't change the color hardly any and I was losing the consistency of the whipped topping, still tasted great though! Next year I'll think in advance and make sure I have green food coloring and make 'homemade' whipped topping in my 'Whip-it' and that way while I shake it the food coloring will be blended. Thank You!

The kids loved the color but weren't thrilled about the flavor..dh helped them out by eating all left uneaten....and he doesn't even like pudding! Give it a try!
