Excellent cornbread. It was very moist, and not dry and crumbly like plain Jiffy Mix cornbread. I was very pleased with the taste. I did add some chopped green chiles to give it a kick. The bread was delicious, and I will use this recipe again. Thanks for sharing.

This was awesome! The cottage cheese makes it extra tender and provides a nice "tangy" flavor. I added the canned green chili's and the shredded cheddar cheese....I figured "it's 'Zaar day, what the heck!" Two of my dinner guests asked for the recipe!

wow-this is great. i used my standmixer to mix it all. This is moist, tasty and delish! We like sweet cornbread so I added 2 tsp of sugar to the recipe. thank you. I made this again and did 1/2 the recipe but put in the whole amount of cottage cheese and the whole amount of corn ( oops) and the cornbread still came out awesome anyway-moist and tasty-the family loves it. thanks again-this is our new cornbread recipe

I am suspicious when recipes say "the best _____ ever!" but this one I think is right. I left out the onion (personal preference) but did the rest as written. Great cornbread...better than any restaurant that I can think of. Plus, it was super easy. Moist, flavorful, a hint of sweetness. Perfect in my book. Thanks for this one!

I don't know whether to rave (because of the deliciousness) or to rant (because this is the kind of food that calls you from the kitchen at 2 am.) but I will add the lucky 13th 'Heck yeah, this is goood". Having ADD means you almost read the recipe — in my case I only had a 9x9 pan, so I just filled that one up and ended up with leftover batter. I couldn't stand reading all those great reviews and having to wait 40 whole minutes to have the darn thing bake. So I took unused mix and melted some butter into a skillet on med/low heat and made the MOST AWESOME cornbread pancakes. They are even better if one rubs some more butter in the pan before flipping them...

Ok, this is my second review of this cornbread. I just HAD to make it again. But is was last minute and I did not have cottage cheese, I used sour cream instead and boy is this good!

I really like cornbread but I find a lot of cornbread turns out dry and crumbly. This sure did not. It was moist and good. I also added some chili and parmesan cheese. This will be made again. Thanks Zookeenee

Huge hit at my superbowl party. Excellent with chili. Very moist. You can cut it into pretty small pieces without it falling apart.Only suggestion would be to use the smallest kernel corn you can find. Thanx for posting this recipe

I tried this recipe for Thanksgiving and my family LOVED it! Since I have a picky crew, I did not use the cottage cheese, onions or corn. Instead, I kept the other ingredients and added some sour cream. I have already received requests from my guests for this recipe.
