These are really delicious and unusual! They were a big hit at work today. However, I'm not sure how to get them to carmelize. I made as directed in a convection oven, and may turn on the traditonal bake mode next time in order to heat up the bottoms in an attempt to carmelize the muffins! Thanks, Kittencal!
