Delicious! I used 7 small eggs, a sharp white cheddar for my cheese, mushrooms, bell pepper and red onion in a 9-inch pie plate. It baked perfectly in 27 minutes. I served it with a side of bacon and a wedges of leftover Lemon-Pecan Sunburst Coffee Cake for a great Sunday breakfast.

    This is a great recipe. For the taste alone, I would give it a 4 but when ease of preparation is taken into account, this becomes a 5. This will officially become on of my go to meals on a busy work night.

    Yum! This was really good. Next time I'm going to add some meat to it. I like this because you can pretty much add anything you want. Eggs are so versatile. Thanks!

    Thank you for posting this recipe, it's quick,easy and delicious! I didn't have mushrooms on hand so added some red and orange peppers, red onion,tomato,zucchini and it was cooked perfectly.. Served it with toast and baked beans. Will make it again for sure.. thanks again for sharing the recipe : )

    I needed a quick and easy meal and this was it! VERY GOOD! I used cheddar/swiss/mozarella (what I had in the frig) to make up the 1 cup of cheese and used ham, fresh onions, and tomatoes. Made some texas toast and dinner was done! Thanks for an easy recipe with ingredients on hand!

    This was a hit last night at dinner. I always have to find something on the softer side to make for my mil and this sounded good. I followed the recipe, and added diced lunchmeat ham and asparagus with the mushrooms. I left out the green peppers as no one in my house likes them. We all really enjoyed the oven omelet and will now be made on the weekends. Even my teenager liked this which surprised me because he's not big on eggs. Thanks for posting. ChefRaylene

    SOOOOOOOOOOOOOOOOO simple, easy to do, DEFINATELY keeper for you know who! Low fat bacon, grape tomatoes and peas, For hubby and me it did please!
