2 Reviews of Healthy Raspberry Almond Torte Cookies

From: LightLisha

On Dec 19, 2007

I have been stalking the baker at my local food coop b/c of a cookie I loved so much. I don't usually like cookies at all. Then I decided to search for it on line and here it was. These cookies are amazing! You might not want to bake them b/c they are so addictive. I like them better though by switching the maple syrup for brown rice syrup. Thanks for the recipe!

Great cookies. For those people who are interested in nutrition + taste, this is a recipe for you. I subsituted apple juice concentrate for maple. (I have hypoglycemia and can't handle maple syrup.) I make almond milk, and this recipe gave me a way to use up those ground almonds. If anyone does go that route, cut back some of the oil and use half almond puree from the almond milk and half regular ground almonds. Thanks for posting.
