From: Frank Santoroski

On Mar 5, 2004

This recipe is really simple to prepare and the taste is oh so fine. We used fresh grated parmesian and fresh chopped basil

I made this the other night and my youngest daughter claimed it was the best fish she'd ever eaten. She had two helpings, which was a first for fish. I used the dried basil. Thanks for the keeper!

This dish was easy to make and very flavorful. I used wild caught ocean perch. My SO enjoyed it very much, so I will be making this again.

It was good, but it could have had a little more flavor. Next time, I might try adding a bit of cayenne.

I made this using freshwater white perch (aka crappie) that my husband and FIL caught. The coating was lightly crisp and I highly recommend using fresh basil because I think the flavor is better. Of course I had to add a little salt because we can't seem to live without it. This is one healthy, tasty dish that I will make again. Thanks Rhonda O

I made a variation and it was excellent. Brushed the fillets with non-fat Italian dressing (I know, bottled but I was in a hurry). Then dredged in 50/50 mix of parmesan and crushed oyster crackers (no bread crumbs either!). Added some seasoning, and it was reallllyyy good...and 'weight watchers friendly' too.

I have to agree with lulu's comment. I have five as well and had to increase the recipe. However, it was amazing, even my child who does not like fish at all loved this recipe.
