This is a family favorite. I have changed the original recipe to fit my family's spicy taste. I add a can of Rotel tomatoes to the ground meat, and subsitute enchiliada sauce for the tomato sauce. Very Yummy!

Ok, this totally rocked! It was perfect for someone who loves lasange but hates the time involved to make it and the fat content! I did make some changes though; I used minced beef instead of turkey as I'm trying to add more red meat into our diet and added kidney beans as well. I have no idea what egg substitute is, so I used a normal egg instead. The whole cottage cheese/egg mix looks sooo revolting, but it turns out great! I used shredded light tasty cheese as that was all I had on hand, and it turned out perfectly! I also added some chilli powder, as DH and I like a bit of spice! I'm having leftovers for lunch today and really can't wait! Thanks for a great recipe!

I was skeptical as to how this would go over with picky DH. He LOVED it and so did I. I added a cup of Ricotta to the cottage cheese and used extra Monterey Jack cause we love cheese. OH, and I just used the flour tortillas I had on hand. This was wonderful. Thanks!

My family loved this dish! (Even the picky eaters ate it all! This did not taste or look like a "low-fat" dish! The recipe was very easy to make but I did alter it somewhat. I made my own corn tortillas, but I don't think that changed the taste or texture. I also used the 16 oz. bottle of salsa, but did not add additional tomato sauce. In addition to the ground turkey, I added one 16 ounce can of pinto beans.

So yummy! I used 3 eggs (instead of egg sub.) & real cheese (not light) and it was wonderful. We followed the meal with Ninfa's Flan (# 91763) which complimented the lasagna perfectly.

this was easy to make and very good. I used the ground turkey, egg substitute and light cheese, but also substituted whole wheat tortillas and added some pinto beans to the meat mixture. fiber is good! oh yeah also used low sodium taco seasoning. Delicious

Made this last night with beef instead of turkey. I Had no egg substitute so I used 2 eggs. I sprinkled some chopped fresh cilantro over the cottage cheese/egg mixture. I cut it into 6 pieces and served each with a dollop of sour cream and garlic bread. There was only 3 of us for dinner, and only one piece remains. It was very, very tasty and super easy to throw together. I will definitely make this again.

This was so different and so fantastically great! I made some minor adjustments to suit our family's tastes: I replaced the turkey with 93% lean ground beef and added black beans and sweet corn to the meat & spices. I subbed ricotta cheese for the cottage cheese and like "KeeperAtHome", I used 12 tortillas in my layers. Lastly, I poured a little mild taco sauce between layers to add an extra "something". The result was a quick, easy, and wonderfully tasty meal that pleased my husband and my boys. Thanks erinBOberrin, and keep posting!
