I loved this and will be making it often this summer. I always appreciate a new way to prepare my overabundant zucchini crop and this was really delicious. I wasn't sure how long to cook the zucchini so left them crisp/tender and it worked well for me. The flavor after marinating is wonderful. Thank you tigerduck!

Excellent! Even good before they marinate. I sauteed the zucchini until it began to take on a bit of color on each side and then tossed in the marinade and refrigerated. I did used dried Greek oregano and the flavor is super! Thanks, Duck!

The seasonings really shine through in this. The zuchinni almost takes on a nutty flavor. I used it as a side dish to plain old broiled steaks and it was a great accompaniment. Thanks!

This was nice but I found it a little heavy with the frying making the zucchini a bit heavy. It did taste like something you buy from an Italian delicatessen but I was expecting something more intense as a flavour.
