This is a great salad! It's probably my new favorite. The only things I did differently was use a few slices of gluten free french bread since I can't have foccacia, and I left out the red onion because I didn't have any on hand. But I can't wait to try it with the salad when I get some!

This makes a great light lunch. I used up the last of my summer tomatoes and mixed a little olive oil, balsamic vinager, salt and pepper for the vinaigrette. I am looking forward to eating the left overs for lunch tomorrow.

I love this salad so much. It’s my current favorite. The only thing I did different was to add a little salt and pepper. I tried it both ways, but adding the salt and pepper really brought all the wonderful flavors out.

We've made this 3 times in the last 2 weeks... FANTASTIC! My favorite salad at Panera, and very easy to prepare at home. Can't wait until summer when tomatoes are plentiful!
