This was great! I made it today for breakfast and both my husband and I loved it. I think next time I'll add some mushrooms or other veggies to it, but otherwise FANTASTIC! Thanks for the recipe!

Easy & tasty, sort of like a crustless quiche. Think I would add a bit of garlic powder with the salt & pepper next time. I used cheddar cheese 'cause I already had it & it needed using up, but I really like colby & will have to try that next time. The closest sized pan I had was a 6x6 which worked okay, but I think I would have liked how the eggs cook better in the bigger pan. I think this would make a great filling for breakfast burritos, but ran out of tortillas so I didn't get the chance to try it yet, next time maybe. Thanks for posting.

Outstanding! Delicious! The omelet is fluffy and light. Spicy (not too spicy but very flavorful) and cheesy. And it's incredibly easy to make. I drained the can of tomatoes and sprinkled extra cheese on top of the egg mixture before baking. I had it tonight with some sliced cantaloupe and honeydew melon on a side for a light but very filling dinner. I can't wait to play around with the ingredients but this recipe is PERFECT as is and I will be making it often. Thanks Nimz!

Easy tasty recipe. I have a hard time finding Rotel tomatoes so had to use a fresh tomato and spiced it up with Mrs Dash Chipotle spice. Cut the recipe back to two eggs. Lovely flavor loaded breakfast. I used a low fat Jalapeno Jack Cheese

Made this exactly as directed and it was wonderful! Easy peasy and so delicious and clean up was a snap! What a darn near perfect recipe! Thanks so much for posting Nims and congrats on the football pool win!! UPDATE 11/28/07: We made this last night with Egg Beaters, 2% reduced fat cheese and low fat packaged cubed ham and it was GREAT! No difference in taste or texture, and so much healthier! We will definitely be making this a lot more often now!
