Definitely better the next day! I love borscht and this is the first time I've made it myself. I really like the borscht I've had at restaurants better. But this stuff is pretty good. I added bay leaves, oregano, thyme, and some dill while everything was cooking. I also added cilantro finish it off. I also added a sprinkle of sea salt and some pepper. Otherwise, I think this would be very bland as is. Really good and easy to prepare, but I am going to still look for a better recipe.

Thank you for the quickie recipe! I added in browned hamburger and 1 Table spoon of white vinegar because I like beef in my borscht and a bit more bite. We got beets at the local farmer's market and I roasted them...then just chopped them and added them later with the cabbage. Thanks again!

Sometimes simple is the best and this borscht is a good example. I cheated a bit and used bagged shredded carrot and cabbage and used plain yogurt rather than sour cream. Made for ZWT4

This was the best borscht recipe I've tried so far! Our daughters are adopted from Russia and we're trying to incorporate Russian cuisine into our meals occasionally. I used vegetarian broth and added some salt/pepper. It was delicious!

We eat this all the time at my house. My husband loves it. It tastse just like the borscht at Moscow on the Hill, a Russian restaraunt in our area where I first tasted borscht.

Delicious and easy, thank you!! I really liked it with lemon and sour cream. I used vegetable broth to keep it vegetarian....

I have never had borscht before so I can't compare it to anything but this was quite good. I love how healthy it is. I might even skip the sour cream next time. We found it to be very light...too light for a main course. We added some tofu "meatballs" and it gave it much more heft which made it filling enough for us. Thanks for the great recipe!

This was a great and simple recipe. My family loved it so much we didn't have any leftovers. Next time I am definitely doubling the recipe.
