Very nice and different way to make potatoes. I have made a similar version on the grill but never thought to make them in the oven. Worked great. The green pepper was a nice addition to them. I used Lawry's Seasoning Salt and they were very tasty. Next time instead of the butter I may add a couple of slices of bacon on bottom and top for added flavor.

Very, very good change on potatoes. Have done them on the grill before but was getting tired of my own recipe. Had never used garlic salt before. I baked them in the oven in the foil. For the last 15 minutes of baking, I opened the foil packet and they turned a nice brown and the edges were all nice and crispy. Great recipe..will definately be making again!

What wonderful potatoes! I added a little minced garlic, then I baked them in the oven. I opened them up for the last 15 minutes of baking, and they were beautifully browned. Had them with sour cream and chives. A great different way to do potatoes! Thanks Karen!!

I really enjoyed the potatoes. The green peppers an onion added a wonderful flavor. It was a nice variation on the usual potatoes I make for a BBQ. I will definitely make this again.

Very good and a great idea for future bbqs. I did bake them in the oven and it was delicious. My family only had one complaint--they wanted more than I cooked! This would also be a great idea for camping.

I gave this recipe to my DIL and she made it last night for the whole family. It was really good and everyone from kids to grandparents loved it. She used a red pepper instead of green pepper was the only change she made. I watched her make these and they are VERY easy to make and the recipe was perfect. Not too spicy just nice and flavorful buttery potato taste

The flavour here was very good. I added some lemon herb seasoning and used garlic powder and salt instead of the garlic salt. My only compliant was that it needed closer to an hour in the oven. I will make them again though because my Hubby loved them! Served with fried chicken and grape tomatoes.

These potatoes were fantastic! Simple to prepare, cooking and clean-up were a breeze. I did use a red pepper instead of a green pepper and sprinkled them with dried parsley flakes. Thank you Karen for sharing this great recipe!

Did it on the grill, with greek seasoning, and used olive oil instead of butter with great success. Really was so yummy. EASY!

Karen, I have tried to grill potatoes before an always wound up burning them to the foil. I was determined to cook them. I used your recipe as a base. I sliced one medium russet potato into thick slices and I cut a small piece of foil and sprayed it with Pam. I placed the potato slices in a single layer. I thinly sliced enough onion (vidalia) to put a slice on each potato slice. Then I had some left over orange, red and yellow bell pepper and I thinly sliced some of each and I place on top the onion. I sprinkled some black pepper and some Garlic & Herb Mrs. Dash. Folded up the ends tightly. Here is where I out smarted the grill. I put the right burner on high heat, but placed the packet on the left side, for indirect heat. Cook for about 1 hour, I turned half way through. This fit nicely into my eating program. Thank you so much for your recipe. I will use it many times to come.
