I don't know why I've waited to try making meatloaf muffins until now. These were just delicious and the addition of the veggies helped keep the meat moist depite the lack of fat. For those who are wonder about those veggies, they look a little odd in the raw loaf but cook right in and blend nicely. My one change was that I didn't have any bread so I used 3 tablespoons of oatmeal (which also makes the recipe WW Core). Also because I like stronger flavors I mixed a little salsa and a half teaspoon of liquid smoke into the ketchup used to ice/glaze the muffins. Thanks Paula.

Excellent taste and easy to make with a food processor. I used oatmeal also to make a WW Core friendly recipe. This recipe is much better than the average meatloaf.

We loved these! I had 1.3 pounds of very low fat beef so I changed the yield to 8 and actually got 12 (but I have very small muffin pans!). I just squirted ketchup on top of each one in a little spiral pattern. We thought these were moist and tasty and I loved being able to get more veggies into my children. I took my cue from Toni and too used oatmeal. I served this with steamed broccoli and a fruit salad for a great meal!

We really liked these! I dont like traditional meatloaf, but this was great. My DH liked the fact that this is not greasy like traditional meatloaf. My kids liked the "mini" part best. I like that there is a nice bit of crunch from the veggies to compliment the soft mushy ground turkey. Great way to get the kids to eat veggies. Thank you! E

Wow, I added all the veggies as it said. It's YUMMY! I also used beef instead of turkey. I used 3 tbsp of worcestershire sauce (I like it). The food processer makes shredding bread and veggies a snap. I WILL be making this again!

I'm going to try this. By the way it's 3 points on Weight Watchers. I'm glad I finally tried this recipe. It's a very, tasty easy meal. I put mine in a muffin tin which made 12. Two for each of us was plenty. I froze the rest. Thanks for the recipe. Update: These DID NOT freeze well IMHO.

I had a little trouble getting this to hold shape, but I made a whole loaf instead of mini loaves so I will try the minis next time. I enjoyed the flavor very much, and the fact that it's chock full of veggies is the best part. I used lean ground sirloin, 2 slices of wheat bread and 8 crushed Ritz crackers to firm up the mixture. I followed the recipe almost exactly except I did not use the Italian seasoning or ketchup; I added salt and pepper to my meat mixture and I topped the loaf with one cup tomato sauce mixed with 2 tbsp of my favorite bbq sauce. I will make this again. Thanks for posting!

I loved these! Very similar to the BBQ meatloaf muffins I posted a while back by Rachel Ray. I used very lean ground beef. I put the carrot, zucchini, onion and bell pepper (I used a red one) in the food processor to get it very fine. I topped them with a ketchup/salsa mixture. These were really moist and the flavor was great! I'm saving this one for sure! Thanks for posting!

perfect recipe for a healthy, quick meal. my 3yr old daugher sometimes requests meatloaf. this recipe allowed me to make them in a perfect size for her using the muffin tin, and then freeze them so that when she requests it, they are ready. followed the recipe, except i had no italian seasoning so i subbed garlic powder and sea salt. used all organic ingredients and the result was very tasty, not spongy and a good meal for my daughter without worrying about giving her a quick meal minus the artificial anythings. thanks for sharing.
