Kitten, you have done it again. This is a delicious frittata. I had a left over baked potato that I peeled and cubed for this dish. Also, when getting out the cheese, I discovered that I did not have blue cheese so I used feta. I think this would be delicious with some fresh dill as a change of pace.

This was so good & I'm so happy to be the 1st to review it. I admit I was intimidated since I'd never made a frittata before, but the directions were twissis-proof & I think the "bare bones" of the recipe can be used to make many variations. My hubby loved it too & that's always my guage for a keeper. Thx!

This was excellent!!!! When doing low carb for breakfast every day it sometimes gets boring but this keeps your taste buds hopping. I cook the onions a bit then but them in the bottom of a casserole dish along with the potatoes then pour the egg mixture over everything and sprinkle w/ blue cheese ( I use more) and thyme then just bake at 350 until a inserted knife comes clean.
