This was great. I went ahead and served it as tacos with the tortillas. Actually, I can't imagine just eating a bowl of this stuff by itself. It really seems like taco filling, but whatever blows your skirt up. Anyway, we loved it, and this will probably be the only way I serve tacos from now on. Oh yeah, I also left out the water and cooked the rice separately.

We enjoyed this delicious comfort meal very much. I used regular long grain rice, and cooked it separately while I browned the meat and added the salsa and corn. I did not add any water to the meat mixture. When the rice was ready, I mixed it in, covered the pan, and let it rest a few minutes. I totally forgot the cheese! I did add the tomato and lettuce which was a nice fresh addition. We will definitely make it again, and I'll add the cheese.

This was so good and so easy. I made it as listed except I only put in three-quarters of a package of taco seasoning because sometimes a whole package is too much for me. But the whole package would have been fine. We had it one night and there was plenty left over as there are only two of us now. So, we had it the next night. My husband asked me to please make Guacamole for the next meal, which I did. It was just delicious with the sour cream. I will make this again and also add the Guacamole to it. Delicious! I made this without the lettuce and tomato (didn't have them in the house) and substituted regular for the instant rice (so I increased the water to 3 cups and the cook time to about 20 minutes.) We put it into flour tortillas and then topped the mix with the cheese. There was an enormous amount which will make for nice leftovers! Thanks for the good recipe!

After a long hard day at work, I was looking for something quick, easy and comforting. I found this recipe and had all the ingredients on hand. This recipe was very good. I will definately keep the ingredients on hand for other dinner emergencies. Thanks for the recipe.

This gets 5 stars for the ease of preparation! This was made in a matter of minutes and it was quite tasty!! Perfect for a weeknight! Added some red bell peppers (and would add more veggies next time)that I cooked with the beef. Thanks looneytunesfan!

We really enjoyed this. This was an easy meal to make and I love that it is made with ingredients I normally have on hand. We thought it could have used a bit more flavor so next time I think I would add half the water and use already cooked rice (or elimate the water totally). We didn't add the lettuce or tomato but did top each serving with cheese. The whole family enjoyed this and it made a quick and easy meal.

This recipe was published as "Mexican Rice and Beef" in the April 2008 issue of Parenting. I made it to share with my two toddler girls. However I used pepper jack cheese, which made it perfectly spicy hot for me, but I was afraid to give it to my girls. Bad news is I had to fix something else for them to eat; good news is there's more for me! I like the easy of preparation, and the contrast of the spicy heat with the sweetness of the corn. I made mine without the lettuce and tomato, but it was still good.
