I was looking for a potato soup without milk or cream, and I'm glad I found this one. I was too lazy to pull out the blender, so I just used a potato masher directly in the soup to blend the potatoes. The finished product probably wasn't as smooth as if I had used a blender, but still had a nice texture. This is a good "comfort food" type soup where the flavor of potatoes really shines. The toppings are essential for added color and interest.

This is the best and easiest soup to make. A sure to please anyone who eats this. It's funny I have used this recipe so many times and never new it was from my home town! No wonder it's so good.:}

I personly don't like any potato soup and i have tried a lot of them. I tried this recipe out and I was surprised at how good it was. I will be making this one alot more.
