Thank you for this recipe! My favorite burrito place (Qudoba) uses lime rice and I'm trying to replicate my favorites at home. I used 1 cup of rice (uncooked) 1 lime 1 T dried cilantro (approx)and I think it turned out just right.

Easy recipe and went well with a Mexican dinner I cooked. I did add some extra lime juice only because we like the taste of lime. I recommend this for your next Mexican dinner.

Perfect! This is just what I was looking for - and with no oil/butter! Thanks! I made this with grilled chicken, black beans and pico de gallo and thought it was just right.

Really nicely and subtlely fragnanced rice, not too overpowering and goes with lot of different dishes. Mexican, seafood, Asian... Add salt, cilantro and lime as you go, if you need more flavor.

Wow, this is a great rice alternative to the typical Spanish or Mexican rice. At first, I thought it was kinda bland, but then I added a little more kosher salt and it really brightened up the flavor. The lime came through nicely and I could have used even more cilantro than your recipe calls for, but ran out of tops and only had stems left. I served it with chicken made with my Mexican Dry Rub. Thanks for this new experience...I will be making this for sure - even for company! Pam

I adjusted the recipe a bit: I used a little bit of chicken bouillon in the water when cooking the rice and eliminated the salt. I also used long grain brown rice for a healthier spin. VERY tasty! I'll be making this with all my mexican food dishes! If you make this with brown rice, allow 40-45 minutes cooking time.

Used this at my son's graduation party. Everyone really liked it. I added the lime juice to the water used to cook the rice.

VERY limey, too much for our taste (we used only one lime, plus the zest because it tasted so strongly after just one). But it went well in a burrito. We'll probably use this again, just with less lime. Thanks!

I forgot to add the lime zest, but this was still really good. We used it to make our own copy cat Chipotle burrito bowls.
