I substituted bob evans spicy sausage for the churizo and more cheese.The whole family inhaled every bit of it and wanted more.A definate addition to my cookbook.

    After having tacos last night I wanted to use up the left over tortillas. Though I didn't have the very large ones, these were more like breakfast tacos then burritos. Nonetheless I really enjoyed them and I used regular sausage since I had no chorizo on hand. I used onions, yukon gold potatoes, and green peppers. I even made a batch without eggs, since I don't eat them. We topped them with some salsa, mexican cheese, and a dollup of sour cream. Thanks for a keeper and congratulationson being chef of the day!

    Excellent... even my husband who doesn't like Mexican liked it... I put in Ham instead of the sausage because there was none here and used red pepper instead of green. I did use my Food processer which is more like a Salad Shooter to do the potatoes, pepper, onions, and cheese... which made it go together fast. Thanks!

    We also used Bob Evans hot sausage instead of Chorizo. Honestly, this is one of the best things I've ever tasted. Everyone should give this one a try!

    I've made these for years since a friend introduced me to them in the early 80's. Try adding a bit of whole kernel corn (I use a few tablespoons of the frozen) and some diced cooked potatoes. It really enhances both the flavor and the texture!

    That was one hearty breakfast! My DH had his just with the ingredients listed to mine I added chopped tomatoes, black olives and taco seasoning. Very Tasty-Thank You.

    Delicious! We did not use bell pepper or cheese, and used egg substitute (and almost double), along with Mexican chorizo. So yummy!
