Haven't tried yet but why not mix the Italian salad dressing mix with the cream cheese first, then spread on rye and top with cucumber? Just a thought/

This is one of my all time favorite recipes. The only problem is I want to eat them all, lol The only thing I do different is I sprinkle dill on top of the cucumber..

Good suggestion, I guess it would work and taste the same. I guess the colorful little sprinkle of dressing mix is just part of the presentation of the appetizer. Thanks!

I can't rate this because I made it a bit diffrent. I mixed the cream cheese and the dressing mix togeather and srinkled dill on top. All of them went at my Christmas party and they were very easy to make. I think they would be better if I sprinkled a bit of seasoned salt over top.

Delightful little appetizers, or even nice as a light lunch. They are so quick to make and refreshing to eat. I used English cucumbers and left the peel on---I thought it added some nice color and contrast. My party ryes were square, not round, and I am too lazy to cut them into rounds.
Actually, I think the square bread/round cucumber combo makes a nice presention. Thanks for posting the recipe--great one to have around for impromptu summer parties and unexpected guests.

I felt like these could be more flavorful, but they went over well at a party I hosted. I would maybe try a flavored cream cheese in addition to sprinkling with the Italian dressing--or perhaps mixing the dressing with the cream cheese, and then sprinkling with some other colorful herb. Good quick appetizer though, I will make again with variations. Thanks for posting!

I served these at my holiday party. These were really good; pretty too. I garnished mine with fresh oregano leaves. I couldn't find party ryes so I used wasa rye bread instead. I used a soy cream cheese substitute, and instead of adding the dressing to the top of the cuke, I whipped it into the cheese. No one could tell it was non-dairy. Lots of compliments.

I was sure I had reviewed this but I guess not! These are really good. Very impressive to bring out a large platter of these beauties. Good fresh flavor and pretty presentation.

A great summer appertizer! Crisp and tasty! The only thing different I did was to snip a few chives on top!
