Santa Fe Beans & Rice is my favorite WW dinner - I eat it at least 1-2x/wk - so I was VERY thrilled to find this recipe. I cannot believe how close this tastes to WW version! I have made it with chicken that I cut into 1" pieces and browned w/ "Mexican Seasoning". There was only enough left for me to take to lunch the next day!! Thanks, KelBel for your version of one of "our" favorite dinners....debi

Delicious! This was a great addition to my growing list of meatless meals. Creamy, hearty goodness. I used non-fat plain yogurt instead of sourcream and omitted the onions for picky eaters. We ate this with tortilla chips and my husband said he thought it would make a great warm Mexican-style dip instead of the normal seven layer dip. So I think I'll be adding this to my appetizer list too!

Creamy, rich, addictive, comforting, spicy and healthy! This was really good! I enjoy rice and beans and this is that plus more. Or should I say less? Less Fat that is! I had some left over grilled steak that I finely chopped and some chipolte sauce that I added to it!

We really enjoyed this. I did have to make some substitutions based on what I had on hand. The ones I had figured were brown rice for the white, fresh corn that I boiled and then cut off the ear for the frozen, an fat free sour cream. But when I went to get my canned black beans out of the cabinet, I was shocked to find out I did not have any! So I got pinto beans out. But one was a can of pinto beans and pork (where did that come from?) so we used one can of pinto and one can of navy beans. I also did not have the right cheese, so I used half colby and half fat free cheddar. But this was creamy and fabulous. We loved it with homemade tortilla chips, but rolled in a tortilla would be good too. I think we might try that with the leftovers for lunch!

I used brown rice and red kidney beans in mine and it came out excellent. My DS and I both agree it's another 5* recipe for you! It went so good with our tacos! Oops, almost forgot, I added some taco seasoning (about 1/2 pkt.) to the mix.

This was AMAZING !!!! I love WW Santa Fee Beans & Rice. This was so easy to make and tasted great. I will be making this often.

This was a great recipe, however it made quite a bit, so if you have a small family i would reccommend cutting the recipe down a bit. I also added more salsa to give it a kick!
