I just found this recipe and I had to try it. I have been working on eating healthier. I did toss the "fries" in about a tbsp of macademia nut oil before placing on a parchment lined pan. I did use the kosher salt. These were absolutely fabulous. These will definitely be my favorite way to eat butternut squash from now on and I need never eat greasy potato fries again. Thanks for posting.

I saw this one on Hungry girl and had been meaning to try it. Having 1/2 a squash leftover from Slow Roasted Vegetable Soup prompted me to try this. Pretty tasty and even my french-fry obsessed 7 year old (who is usually a french fry purist) enjoyed these!

I had a pretty small butternut squash (about 9 oz. seeded) and I decided to use it to make these "fries" ... I am SO glad I did!! I don't know why anyone would choose to eat grease-laden potato fries when this exists as an option. I tossed the squash "sticks" in kosher salt and a bit of chili powder, and baked for about 45 minutes. I didn't flip it, either, but it didn't seem to make any difference; they were FANTASTIC. Well worth the pain of cutting through a raw winter squash. Thanks for posting!

Very nice recipe. Made these at the last minute to go with organic turkey burgers for my 4 yr old daughter and I. Followed recipe except used olive oil instead of cooking spray and sea salt. Taste was very very good. Next time my daughter wants garlic powder on them(she loves garlic). We didnt use ketchup as they were good enough on their own. Thanks for sharing a quick, easy, healthy recipe.

A definate keeper! Delicious....even my friend who doesn't like squash liked these very much. A tip: the thinner you cut them, the crispier they'll be. I had a mixture of thin and not-so-thin...... crispy or soft, they all were yummy. Am looking forward to making them again and seasoning with pepper, seasoned salt or spicy seasoning. A bit of hard work getting the darn thing peeled and cut up but worth it.

Hungry Girl is my favorate and can't steer you wrong! My boyfriend and I made these a few nights ago (and I found it first on her website, too). While I wouldn't consider them a fix for my fry cravings, you can treat them like normal french fries- katsup, salt, a side with a veggie burger, etc. Happy dieting!

I was so pleasantly surprised! These were great! 'Diet' food so often is not! These were very french fry'ish with a hint of natural sweetness. Definitely great with catsup- actually better with catsup than without! Thank you for satisfying my french fry craving on my diet! A KEEPER for sure!

These are so incrediably good! And with ketchup they do indeed pass muster as "real fries"!
Even my oh so picky DH, who normally doesn't like squash much at all, was totally impressed with these! And the kidlet, age 9, LOVES them. Made these just as recipes says. Thanks for sharing this recipe
