This is a great fall meal. We made it with regular pork sausage the first time and the last two times, we've used chicken apple sausage and really liked the combo with the apples already in the mix.

I thought this was just wonderful. Instead of the sage and garlic salt I coated the raw squash with a little butter, molasses and brown sugar after poking lots of hole in the squash so the flavor would soak in. It gave the dish a sweet rich flavor.

Terrific recipe! I left out the mushrooms and used Italian Sweet Sausage with casings removed, but did everything else with the recipe. DEEEEEELISH! Thanks for posting!!

I love roasted acorn squash as a side dish, and this is a really good way to do it as a main course. I used maple flavored sausage and all the flavors went together wonderfully.

As a tradition, my family votes on for the best dish on the Thanksgiving table. This came is second. This is a wonderful way to serve acorn squash.

I absolutely loved this! Half of my family loved it and half didn't like it at all. Kids! My boys didn't care for it at all but what do they know? My 4 yr old daughter cleaned her plate. This was awesome! Thanks!

My dad is overflowing with vegetables this year because of the warm fall, so he convinced me to take a couple of acorn squash home with me. I am so glad that I did and that I decided to try out this recipe! mmmmm was it delicious! The apples, sausage, and squash go so well together. The only modifications that I made were using 1/2 lb turkey sausage and bread cubes rather than 1 lb pork sausage and bread crumbs. Oh, and I didn't have quite a cup of bread cubes, so I actually used some crumbled ramen noodles. It gave the stuffing a little crunch. This recipe is a keeper! Thanks Kaarin!

Very good. I used chicken sausage with apple. Good and filling, I think you could probably experiment and find other seasoned sausages that would work with this.

This is a really great and filling recipe. Only problem I had was that I had way more stuffing than I could fit in my squash so I think next time I would only make half of the stuffing or else fill more squash
