Simply delicious! I did not make muffins but a 13x9 cake instead - I watched it and inserted a toothpick for doneness. Baking time was roughly 25 minutes, and it's nice and moist. I did alter the recipe slightly and used 1/2 cup skim milk and 1/2 cup water and 1 egg to make it a little more cake-like, but those 3 points spread out over 24 servings is not worth counting. It came out great! Thanks for sharing.

    They do have that low-fat kind of texture like you would expect from a muffin made without oil and they aren't crumbly-tender like a high-fat muffin, but still very tender and moist. Although I don't usually use cake mixes, this is a recipe I'd make again.

    My husband and toddler can't stop eating these. These are incredible muffins, very moist and taste like pumpkin pie. I found the texture to be a bit off, and plan to add 1/2 to 1 cup of quick cook oats the next time I make them. As long as you are not expecting something sweet, like a cupcake, I'm sure you will enjoy this recipe. Update: I made these with the addition of 1 cup of quick cooking oats. It dramatically improved the texture and did not increase the points per muffin!

    I loved these muffins. First time i made them exactly like the recipe. I loved them. Next time I used 1/2 cup water (instead of 1 cup) and added two egg whites so they would be light and fluffy. Loved them both ways. Thanks for the great recipe.

    This is one that I make all the time, I use a snack size no sugar added apple sauce instead of the water. Sometimes I also add some walnuts when I want to a little crunch.

    These are so fast to throw together and very tasty! I have made these quite a few times now and will continue using this recipe as a staple in my house! I use some extra cinnamon and pumkin pie spice in mine along w/ some vanilla or almond extract. Thanks~

    These are awesome!! They are moist and taste great. It is hard to believe that just 3 ingredients can make such wonderfully delicous muffins. I added just a few chocolate chips to them because I love the mixture of pumpkin and chocolate. Who knew that low fat would taste so sinfully good. I will be making these again and again!! Thanks so much.

    These were amazing and so easy to make! I did add one egg to it and made it in a 9 by 13 pan and it took about 24 minutes. They were nice and moist and we ate it all in the first day! Next time I will try with the oats or chocolate chips! One of the best weight watcher recipes I have ever made

    These muffins are wonderful! However, I have always made them with just cake mix and pumpkin, no water. It's a little tough to mix but the outcome is superb. Adding a few cinnamon chips to the recipe, as published, is very good. I have also made this recipe with many different flavors of cake mix. I make it with chocolate cake mix and a few chocolate chips (You won't taste the pumpkin). The most recent variation I have made is with Strawberry Cake mix, fresh strawberries (cut into small pieces), and white chocolate chips. I have made this for years and never grow tired of it.
