How wonderful to be able to enjoy mashed potatoes without all the added fat! I misread the instructions and cooked the potatoes in the broth...lol. I did,however, save the broth when draining the potatoes, luckily. Great flavour, I don't have to miss out on my mash. I'll be making my mashed potatoes this way from now on...my heart and arteries thank you!!!!

This is, in my opinion, the best way to prepare mashed potatoes. I even find it much tastier than the original butter-laden technique. I've been using it for years, and my entire family loves it. Sometimes, they add a little butter to theirs (I always find it plenty flavorful without butter), but they love the chicken broth taste--and I love it too! Any recipe for which the lowfat version is better than the whole-fat version is a keeper! Thanks for posting this and reminding me how much I love it.

These were suprisingly delicious! We ordinarily fatten up our potatoes to an unbelievable degree, but with these, all we added was a pat of butter on the plate and it was perfect! High on taste, low in fat. And the best part? They taste even better the next day!! I couldn't believe that. Never happens for me, but these do. The chicken stock is flavor magic. Thanks for sharing this waist-line friendly recipe!

I have made these twice now and I absolutely LOVE them! Reserving the chicken broth and using it to mash the potatoes instead of butter and milk or cream is just phenominal! The last time I made them, I stirred in Ranch Dressing and Seasoning Mix to taste (about a Tablespoon) and had the best ranch potatoes I've EVER had...and because it has dried buttermilk powder in it, there is no reason to add sour cream, so I stayed true to your skinny recipe! They also look "buttery" if you start with yukon gold potatoes. I just can't believe there is a delicious, healthy way to eat potatoes! Thanks so much!!!!!

This was one of those recipes so much better than I was expecting. I often like to make mashed potatoes using skim milk and not much butter, but when you do this just right I think it's lighter, more fluffy and tastier than regular mashed potato!

So good and so healthy - I used low sodium chicken broth and no salt and they were soooooo good. I was also pleasantly suprised at how rich they tasted. Thank you !
