This was easy to prepare and my family loved it! I made a double-batch, using 1 lb. ground beef and 1 lb. shredded chicken breasts. I seasoned both with store-bought taco seasoning and added onion while cooking. I also used monterey jack cheese in the enchiladas, then topped with the Mexican blend cheese. Served with Mexican Rice and the family was very impressed (and full). Thank you so much for sharing!

These were SO good and SO easy!! Fixed them for a quick lunch over the weekend and they were ready in no time! This recipe will allow many variations;I will definitely be using this again!!

This is pretty basic, but needs some punching up, IMO. I added half a diced onion to the meat (I used a ground beef/ground turkey mix), as well as garlic, a small can of green chiles and a dash of chili powder. I added a can of pinto beans to the filling as well. Used spinach tortillas, a little less cheese, and topped the whole dish with chopped scallions. The cooking method is right-on and makes for a quick main dish, but it definitely needed more spice & flavor for us.

I used Enchilada Sauce # 31811 and since I didn't have cheddar cheese I used mozzarella. I also used Tofu crumbles instead of beef since I keep kosher and we cannot eat cheese with meat. I'm sure it tastes great with the meaty taste, but I've never had an enchilada before and this was FANTASTIC!!! Thank you for the recipe I will be making it again for sure!

This was delicious and easy! A great family dish that doesn't totally overwhelm young children with unfamiliar flavors, yet isn't too bland for mom and dad. I double the recipe on these enchiladas and serve the extras as "planovers" the next day for lunch for my day care children and they love it! We are cheese lovers in our house so we add some additional cheese to the top of this when we bake it.

Very Tasty!! I've made other Enchilada recipes before but this is the BEST one yet! I did punch the recipe up like newspapergal said with adding to the filling, made them taste great! The kids asked for seconds on the enchiladas. Served them with refried beans and rice, also adding a little shredded mozzerella cheese to the beans and rice.

Yummy! Super super easy compared to making shredded chicken enchiladas! Woohoo! I usually use corn, but went with your flour tortillas last night, and the whole dinner rocked! Thanks so much! We loved it! Oh, and just my 2 cents: If you pop Zataran's Spanish rice in the microwave at the same time that you pop the enchiladas in the oven, they'll be done at pretty much the same time. Thanks for the great recipe! My husband said I should make these tomorrow night and the next night, because they were so good. I used 19 oz of red enchilada sauce because the 19 oz can was cheaper than two 10 oz cans, and it still turned out great. I also forgot to add the cheddar cheese and I just realized it.
