I did not have the corn, so I omitted it and we ate the muffins with broccolli and carrots on the side. I did not add the sugar, they were a tad "sugary" in our opinion, I think we would like these if we used regular cornmix though. We are not huge fans of the pre-packaged cornmeal mix. It was overall a quick recipe and very filling.

we really enjoyed these! i used thawed frozen corn and added a little finely diced onion just to use it up. chopped up the hotdogs fairly small so there'd be hotdog in every bite. i used Cornbread Mix for the mix (i add a little extra sugar to it to make it more like Jiffy brand) and used the amount stated in the mix recipe to make 2 batches of cornbread. i think that actually doubled the amount of cornbread mix as there didn't seem to be enough hotdogs in there even though i used 6 instead of 5. could have used more corn and cheese too, but again i think the error was mine as i got 36 muffins, not 18! i also had to add more liquid to make it even mixable. regardless, these were pretty darn good and i'll be making them regularly for DD's lunchbox and a quick lunch for my 2yo. and next time i won't use so much cornbread mix!

i made these for my grandchildren while i visited them in pittsburgh(BLISS). they both loved them i finely chopped the hot dogs. next time, i will not use the brown sugar. with the brown sugar it is a 4 star, without will make it a 5 star recipe.

This recipe gets 10 stars from one picky little eater! He LOVED these! They were so easy to make and really were good! I used an 18 ounce box of cornmeal mix and they came out fine. My batter was never thin... and I made them in Jumbo Muffin tins. This recipe is perfect for kids! I bet you could even sneak some other veggies into it!! Thanks mama for a real hit at our house!!!!

I let my 3 boys rate this one.. needless to say, they loved it and thought it should get 10 stars.. I loved it because it was FAST and easy and had food value, unlike many quick and easy things out there for kids today.. There is a great balance between the sweetness and saltyness... They keep well, and are PERFECT for sending in your childs lunch... One thing I did add was a bit of grated cheddar cheese to the mix and it just made it that much better! KEEPER 4 SURE!!

I made these for DD to take to school, they looked and tasted delicious right out of the oven. I will say that DD didn't like them in her lunch because they got soggy in the thermos I sent them in. I had frozen the left over muffins and they were still quite enjoyable reheated in the toaster oven. DD asked me to make them again soon! Thanks Mama!

I made these last night for my 15-year old neice and myself. Since it was just the two of us I used one box of cornbread mix and a small can of corn. I forgot the cheese . . . I also added honey instead of the brown sugar and threw in some taco seasoning for flavor. They smelled and tasted awesome!! My neice exclaimed that they were "soooooo cute!!" thanks for the fun idea!!

I halved the recipe and got 24 mini muffins perfect for my toddlers and picky 8 year old. Left out the corn due to the muffin size and diced the hotdogs. Great kid friendly recipe that stores and travels well. Thanks!

nice comfort food, kids liked it, easy to prepare. Froze well so we had them handy for after school snacks for the kis to pop in the microwave
