I made this recipe yesterday for a client and it turned out yummy! So good that I am making it for my husband and myself tonight! I did make a few changes - I kind of combined two recipes where I made my own stock at the beginning by simmering chicken stock with carrots, herbs, celery and onions. And, I added fresh chopped sage and lemon juice to the meatballs and sauteed them in a dry frying pan just until they were browned to give them a more pleasing color. Then I added them to the broth with the spinach (used frozen chopped) and orzo (I just love orzo). I also added crushed tomatoes, fresh minced garlic, lemon juice and parmesan cheese at the very end and simmered for another 5 minutes or so. Made garlic parmesan toast to go along with it. I love the recipe - and am so glad I found it!

    I must give this recipe 5 stars! It is delicious! I did brown the meat balls before adding to the soup and added extra onion powder.

    This was okay, but I think the meatballs definitely need to be browned first and put in the soup just long enough to heat them through. The boiled meat didn't look appetising in the soup and it also released a lot of fat into the soup, which I had to spend ages skimming off. The overall flavour was good though.

    Very good. I have also made this with italian sausage and the longer you let it simmer the better the flavor. Wonderful taste.

    This soup is incredibly easy and delicious! My husband asked me to make some of this soup, and he had three bowls! I couldn't get him to stop! In fact, I have 1/2 lb. of hamburg left over, and he's asked me to make it again tonight! I'll most definitely be making this regularly for my family! By the way, I used frozen chopped spinach, and added a couple cloves minced garlic, and some black pepper. Delicious!

    This soup was absolutely awesome. I browned the meatballs first then added to soup. Also added minced garlic to meatballs. Used frozen spinach instead, but will try fresh next time. Simmered for 15 min. before adding the orzo.

    My honey asked me to make this. He ate two bowls! I added garlic and parmesan cheese to the meat balls and browned them first. Served with a crusty frech bread for a great dinner.

    I used the tips from Christina1 when I made this wonderful soup! Except I didnt use orzo (because I couldnt find it at the market), I used capelli d' angelo instead, a few cloves minced fresh garlic and some chives... it turned out fantastic! I also browned the meatballs, but used a full pound of ground beef instead. This is a nice example of a recipe you can play with!

    I had the idea to make this soup when Campbell's came out with their version. It tastes wonderful! I used ground turkey instead of ground beef to decrease the amount of fat! Yummy

    Oh My, What else can I say that hasn't been said? This is my first attempt at wedding soup and this recipe is fantastic. I think I will have to say that this is my new favorite soup! One that I will be making again and again. I couldn't find orzo at the store (what a sin!), so I used fideo instead and it worked beautifully. I also browned the meatballs before putting in the broth, just because I like the look of browned meatballs better (just a appearance thing for me, that's all). I also added a bit of garlic powder to the meat mixture and used spinach instead of kale. But other than that, those were the only changes I made. Thank you Evangelia, for this yummy soup.
