Good Muffins I substituted the lemon for lime which added a lovely sweet sour taste to the muffins. Could taste the lime which I loved. Lovely texture to muffins.

This recipe makes light delicate muffins that are close to cake, but not as sweet. Very nice. Thank you, Virginia, Tim is a lucky son.

My husband is a blueberry muffin junkie and he loved these muffins. He finished off six jumbo muffins in one day. I made a second bunch with 1/2 cup fresh blueberries and 1/2 cup fresh raspberries. Very good!!

I followed the directions but found it turned out more like a dough and not a batter. I ended up adding about another 1/2 cup milk to make it pliable for spooning into the tin. I may try it again but likely will search for other recipes. Thanks anyway!!

This is a good easy recipe for a delicious muffin! My Granddaugher made a batch last night and we all scarfed them up for breakfast. Thanks so much for sharing, Virginia, we will use this recipe again!
