I've been making these for years, but never saw a recipe for them before. I don't use butter, and we like Swiss, jack, vegetable jack, jack and cheddar blend cheeses. We often add canned green chiles, black olive slices, hot sauce, avocado slices, bacon crumbles, and...well just about anything we have on hand! We have these for breakfast, lunch, dinner, or any time we want a quick tasty snack. This is the perfect "fast food!" Thanks for posting - something I never thought of doing - so everyone can enjoy!

I had these quesadillas for a quick and yummy lunch. Added a little refried beans to the tortilla before putting them together in the skillet. So good!

I've said it before and I'll say it again - sometimes the simplest things are the best! These are a perfect example! Easy to fix, yummy to eat...these made a perfect snack for while watching football! I used cooking spray for some and butter for some, and IMHO, the ones with the cooking spray turned out a little crispier, but maybe that was just my old electric skillet.
Either way, these are so very yummy! Thanks for the great recipe!

Simple, quick, delicious! Found out it's best to fry on medium heat in order to melt the cheese but not burn the tortilla.
Served with pebre. Thank you for a great recipe!

Mexican Grilled Cheese Sandwiches....love them. Made for lunch using homemad tortillas. Added a little salsa before cooking and it was perfect.

Great Directions! Perfect recipe. I added steak to half of ours and served them with hot peppers instead of salsa. Everyone loved them including the four year old! Thanks!

I make this often and add jalapeno slices....I often use oil and put all together and flip when golden and cheese melting..yumm!!

This is a great guide to the basics and just what I was looking for. I used my George Foreman grill. I lightly greased it with 1/2 T. pat of butter and then just put my two filled tortillas on the grill. My tortilla's were not terrible big, so 3 minutes left them somewhat crispy with brown grill marks on them. It is easy to see a potential for endless combinations. I put a little pre-cooked chicken, cut fine, in mine and some chopped jalapenos along with the cheese. Just the thing for a summer's day lunch.
