Instead of the plum tomatoes I added a can of Rotel tomatoes with green chilies to give it a little more pizzaz. We LOVED it! Had along with Linda's Mexican Meatloaf and we really enjoyed them both! We will have this again soon with my modifications. Thanks Jessica for this great rice recipe!

This recipe is a favorite in our house. I add a small can of corn after the onions have simmered a bit. Tastes wonderful.

I will not give this a star rating as I seem to be the only one with the issue I had. I found cooking the rice for so long prior to boiling made it very chewy and hard to cook all the way. Perhaps there should be a time estimate on how long to do it. I was under the impression you should not brown your rice for more than 20-30 seconds, but these instructions lead me to believe I needed to brown my rice for a few minutes. I will try this again without this step, though, as the dish did have good flavor (even though I couldn't eat more than a bite..)!

This was really good. The spice level was just perfect for my taste. Definitely a keeper! Made for ZWT3.

Very easy, yummy recipe. I did substitute a 28 oz can of tomatoes for the fresh tomatoes & the can of sauce. We really liked this & can see making it to go with other than just mexican meals. Thanks for this great recipe!

I added a can of green chilies in with my other ingredients for some added flavor. We had it with Linda's Mexican Meatloaf for dinner. This is one Mexican rice that I will be making again. We loved it!

It was very good. . . I did do a couple substitutions, used canned diced tomatoes and chili sauce (was out of tomato paste), and added some diced poblano pepper. Thanks for sharing.

My family really liked this rice. I followed the recipe but forgot the fresh tomatoes, came out fine without them. Served with Chicana...mexican I Think? #183483 and Unfried Refried Beans #234919.
