This was fantastic! I had to sub 1 zucchini for yellow squash as they didn't look all that lovely at the market. I doubled the cheese and used diced tomatoes with green chiles already in them. While the flavor was good right away, I think it really improved upon standing. The casserole firmed up and the flavors blended well. The smoked paprika adds SO much to this dish...please be sure not to sub regular paprika, I think you would be missing something if you did. This is a wonderful casserole, low carb only makes it better!

I used ground turkey, and two HUGE yellow squash (then ended up taking out a cup or two later on). I increased the garlic to three cloves, and used two good sized tomatoes with close to one cup of water. I threw in half of a fresh chili pepper and it was just the right amount of heat. I was out of chili powder so I threw in a packet of homemade taco seasoning as substitution. I'm not sure if it would have had enough flavor otherwise. I just let it simmer on the stove until nice and goopy, then stirred in the cheese. As it turned out, we all loved it and will most definitely be making it again and again!

Excellent. I will make this often. I made the whole thing on stove top and skipped the cheese topping.

Yummy! We used twice as much cheese but otherwise followed the directions completely. This is delicious and simple. Thanks for posting.

This was a yummy, filling one-dish meal. I used zuchinni and added some orange bell pepper. I loved that this was South Beach Diet friendly without having to make any changes. I'll be making this again in the future. Thanks for posting.

I really enjoyed this but I would definitely drain the tomatoes next time as there was alot of liquid leftover, even after baking. I have used this combo of spices before and I think I may even add some cayenne next time. It can never be too hot for me!!

I opted to use the ground Italian sausage and it was out of this world! You'd never think that these simple ingredients would turn out so wonderful together. I'd love to try some fresh parmesan cheese in this recipe. Such a great way to enjoy summer squash! Thanx for sharing!

This was a great recipe. To be honest, I was a little concerned when I started putting everything together and I was even thinking of what I could make in case it turned out bad. But, it was really good! My husband, who is not a casserole guy, loved it and even took the leftovers to work for lunch! My 6-year-old also gobbled it up. (I didn't have smoked paprika so I used regular paprika, I used half squash and half zucchini, and I also substituted colby-jack cheese for the cheddar.) Like you said, a great way to use up summer veggies.

Nice taste, and a great way to use up some of your garden vegetables. We added extra cheese, and substitued a zucchini for one of the yellow squash.
