Yum!! I was looking for something along the lines of Amy's Organics Lentil soup. The flavors in this soup really aren't the same, but I didn't care because it was so good. It was super easy to make. It was perfect for a fall day and I'm looking forward to the left overs. I made the following changes: 1 Tbs dried minced onion for the fresh, double the carrots, no celery, upped the pearl barley to 1/2 cup, added 1 Tbs of apple cider vinegar, 1 Tbs vegan Worcestershire sauce, 1 tsp ground cumin, 1 can diced tomatoes undrained, no topping. Next time I may thicken up the broth a bit as a personal preference and cut the Worcestershire sauce down to 1/2 Tbs since that flavor was a little too strong.

Cheap and easy, can't ask for more than that. Thanks, Toni. I added a splash of white wine, I might add more next time, as well as more garlic, but that's just me. Hubby liked it as is. I served with a peice of garlic toast.

Perfect. I really enjoy having soup for lunch and am always looking for easy healthy soups to add to my selections. This is now one of them.

Very easy. It was good the first day. It was wonderful the next day (and the next) with a little bit of sour cream rather than yogurt. I served it the first day with optional vinegar (German style), which most of the diners turned down, but gave it a more interesting and complex taste. Mmm. I used pearl barley and beef rather than vegetable broth and cooked in the crockpot (2 hours on high, 8 on low). I increased the recipe by one-and-a half and figured I spent under two dollars (U.S.) for the whole ten servings. Even if it had been "four stars" rather than "five stars," the cost of the meal would move it up to five. Thanks toni gifford!

wow this is easy and really tasty. ive already made it three times for guests...i never use celery because i always forget to buy it...and i usually double or triple the recipe...i dont top it with yogurt. i find that it sometimes turns into stew so i have to add more water... the best tip i have is squeezing a bit of lemon and good extra virgin olive oil into the bowl for a more complex treat. the olive oil is optional, but the lemon juice really takes it to the next level.

A very nice, healthy soup. I added 1/2tsp of crushed red pepper to spice things up a bit. The extras went into the freezer and I'm looking forward to enjoying them for lunch in the future.

I just about double the veggies, and added a can of diced tomatoes along with the stock and water. I did not use the optional topping. Really delicious and satisfying. I like that it is a healthy vegetarian option, but still very filling. It's perfect for fall lunches. Thanks!
