LOVED IT! Made it with sugar. My husband is not too big on Cinnamon, and since the cinnamon really jumps out at you in this one, the next batch I made without it for him.

Thank you so much for posting this recipe, Nicole! I made this for my diabetic mother, and it really was good! She said it tasted "sinful" even though it's guilt-free. I'm not diabetic, but I think I will make this recipe for myself too...it's a wonderful guilt-free snack or dessert. I would love to see any other diabetic recipes you have.

Another "excellent" vote! Great taste. I made this for my uncle who is on a no fat diet because of a heart condition - he really enjoyed! Doesn't taste low fat. I used no fat chocolate cream cookies processed in the food processor - that added a nice texture.

I needed a fast and easy dessert and this was just the right thing. Had a luscious and creamy texture and a great mocha flavor. I topped with Cool whip and a light sprinkle of ground cinnamon. Looked beautiful and was a not so guilty indulgence. Thanks papergoddess.

I really like the combo of coffee, chocolate and cinnamon, so this was a winner for me. The bonus is that my diabetic husband can eat it too.
