These potatoes were sooo good! I baked the potatoes on a large jelly roll pan covered in foil and coated with vegetable oil spray. I had to have a little of most of the potatoes overlapping just a little bit in order to fit all of the potato slices. I used 1 tablespoon of a melted(by microwave),light butter spread and brushed it on the potatoes. It was a perfect amount. I then sprinkled about 1/2 a small, diced onion on the tops. I followed this by just sprinkling on pepper and salt without measuring. I'm sure I used more than 1/8 teaspoon of pepper. I baked the potatoes for 30 minutes. Then, I sprinkled them with dried parsley flakes and dried thyme without measuring again. I followed this up with the cheese for the topping. Since I made the potatoes like I described, all of them were covered with spices and toppings. It was delicious!

My daughter was over the night that I made these and she demanded that I give her the recipe and she has been making them a couple of times a week since I gave her the recipe. They are wonderful tasty and easy to make. Thank you for a great potato recipe. We make them often.

As Caroline pointed out, these potatoes come out of the oven and they are very attractive. Even though the potatoes are not seasoned in layers, the flavors blend nicely. I stirred them after adding the parsley and thyme just before topping with the cheese.

These are great potatoes! I halved the recipe but used the full amount of topping as I decided to cook these in a single layer, slightly overlapping. This gave me the crisp outer edges which we really enjoy! Great topping mix, might add a couple of minced garlic cloves too next time, but this is lovely as is!

I followed aviva's suggestions, and spread the potato slices out on a larger pan. Brushed them with melted butter, and then sprinkled on the spices. Beware if you do this~they will not take 45 minutes to cook. Mine were done in 20-25 minutes. Was feeling lazy and used onion powder instead of minced onion; added some garlic powder as well. Did not measure any of the seasonings, just sprinkled. Lovely combination of flavors. Thanks for the recipe! Next time I will try it in it's original form, but either way I'm sure it's a keeper!

I sliced my potatoes into a bowl, and poured the melted butter over them and mixed well to coat all the potatoes before transfering them to my baking dish. Then sprinkled with re-hydrated minced onions, salt and pepper. These baked for about 30 minutes before I added the cheese. Wonderful! Definately a keeper!

This is absolutely delicious. I thought about seasoning each layer, but in the end I didn't (so now we know both ways are good). Like Kaarin's, my potatoes were "crispy on the edges" and "perfect"! I wish I'd been able to take a photograph; even in a plain pyrex dish, these potatoes came out of the oven looking so good we instantly named them "pretty potatoes"!

Very tasty! I used dried parsley as I didn't have fresh, otherwise followed the instructions. Who knew thyme and parsley went so well with potatoes! Hubby loved them too, and I will make these again.
