We make this for Thanksgiving every year with one addition...GARLIC!!! Try adding 1-2 heads of peeled whole cloves of garlic to the beans before you toss them with oil, roast as indicated, and if your family is anything like mine, watch it disappear.

FANTASTIC!!! I've never heard of roasting green beans until now. The first time I made them, I made them like your recipe said. Wonderful! The second time I made it, I added fresh garlic, minced and thinly sliced onion. It really enhanced the flavour. Next time I will add a bit of balsalmic vinegar, along with the garlic, onion and let it carmelize. Thanks for a wonderful dish and the inspiration it brought.

May I add a comment and a tip? I've done green beans this way without having seen this recipe — so many veggies roast successfully. This is delicious! When lazy, I roast the beans alongside a chicken and potatoes in the oven (all-in-one-meal!). You might also find it easier to toss the beans with the olive oil in a mixing bowl before it goes into the oven. Tossing in a bowl coats the beans more evenly and might even use less oil. Then tip into the pan. Another tip: if you can find flaky sea salt like Maldon Salt, salt the beans liberally when it comes out of the oven instead of before. Maldon has such a wonderful "sea salinity" taste and a very satisfying crunch!! I find Maldon is better used after cooking food instead of during, as the taste comes out better. This recipe deserves every 5 star review it's been given. Tastes like sweet french fries. Only change I made was to put the beans in a bowl to coat with the oil and salt - got by with less oil that way.

I used a garlic infused olive oil lightly sprayed with one of those gadgets — kept these very light and oh so delicious. Served 'em as a side but would happily make these a terrific snack. Indeed I made double what I thought to pack as a snack for tomorrow and ended up eating all of them at dinner. Just delicious.

Made these for dinner last night, not one left on the plate! I used garlic oil, a small amount, a bit of Mrs Dash and a bit of kosher salt. Even DH who doesn't like green beans had two helpings! So you know these must be good.

This was EXCELLENT! The darker they are, actually, the better! I used garlic infused olive oil and Mrs. Dash and fresh ground pepper. YUM!!!! Straight from my garden - there are only two of us and we had them for dinner one night (I don't know how much I cooked, whatever I picked) and then on the next day we served them room temp. in a wine glass amongst other snacks and everyone loved them. Multi-purpose! Thanks for the great idea, never occurred to me.

For just a little over a pound of beans, I used a full T. of oil. Way too much! Despite my miscalculation, these were downright addictive! Next time I'll definitely try adding some garlic cloves. Lemon pepper might not be bad either. Thanks for an instant 'classic', seamouse!

Very good! I made these for mid-day snack for my 3 girls and used a mix of green beans, orange and yellow carrots and red pepper...very good...they were gone quickly

I fixed these on Christmas Eve. The kids ate them before the company arrived. I heard they were really good. LOL.
